Trying to figure out what to do with those super-ripe bananas you have in your kitchen?
Use them to make:

ROBERTA'S CHOCOLATE CHIP
BANANA CAKE
 
This is my mom's chocolate chip banana cake recipe.

mom's banana cake

Ingredients:


I've updated the recipe a bit.


1-3/4 sticks of
 butter

1-1/2 cups of Sugar

2 eggs

1-1/2 tsp vanilla extract

1-1/2 cups banana, mashed
  (about 1 or 2 ripe bananas)

2-1/4 cups all-purpose flour

1-1/2 tsp baking soda

1-1/2 tsp baking powder

1 cup chopped or
  ground walnuts or pecans

1 cup semi-sweet
  chocolate chips

 

MIXING:
Cream the butter, add the sugar, eggs and vanilla. Stir in mashed banana.
Gradually mix in the rest until combined.


BAKING:
Preheat oven to 350º F -
For a BUNDT PAN bake for about 55 minutes,
 9X13 PAN: 40-45 minutes, BREAD PAN: 45-50 minutes.
ALL BAKING TIMES ARE APPROXIMATE.

You can also use two - large 6 muffin tins to make 12 banana muffins
like I did over at Virtual CheeseBlogger.

 
I use butter instead of margarine.
Fold in 1 cup of semi-sweet chocolate chips when you add the nuts.
It comes out best when you use a bundt pan.

Tips for a great banana cake:
Grease your pan well with butter/margarine, and coat the
buttered pan with ground walnuts or pecans.
it creates a nice crispy crust and the cake comes nicely
out of the pan when cool.

Use a cake tester or knife to see if the cake is done; the knife should come out clean.
